Ingredients
- 1½ cups masarepa
- ½ cup unflavored protein powder (whey or plant-based)
- 2½ cups warm water
- 1 tsp salt
- 1 tbsp olive oil
- 2 grilled chicken breasts, sliced
- 4 hard-boiled eggs, halved
- ½ cup plain Greek yogurt
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tsp dried dill or parsley
- Sliced cucumber and tomato
- Salt and pepper to taste
Step-by-Step Instructions
- Combine masarepa, protein powder, salt, and olive oil. Gradually add warm water, mixing until a smooth dough forms. Knead 2 minutes. Rest 5 minutes.
- Divide into 4 thick discs and cook on your arepa maker for 8–9 minutes until golden. Note: the protein powder may cause slight color variation — this is normal.
- Prepare the Greek yogurt sauce: mix yogurt, garlic, lemon juice, dill, salt, and pepper in a small bowl.
- Slice grilled chicken.
- Open each arepa and spread a generous layer of yogurt sauce inside.
- Fill with grilled chicken, hard-boiled egg halves, cucumber, and tomato.
- Drizzle with extra yogurt sauce. Serve immediately.
